School lunch boxes in the UK have come in for a bit of stick lately, with research showing that virtually none of the lunch boxes reviewed were deemed healthy and a massive 50% contained no fruit or veg.

Well, there are quick and easy ways to add fruit and veg to the lunch box. The easiest way of course isto ensure there is a banana, apple ortangerine in the box everyday. Also try and stick to the principle of adding some salad or grated veg (orfruit) to every sandwich. Here are a few simple suggestions for lunchesto keep you going for a week.

1. Sandwich of hummous and grated carrot, preferably made with wholemeal bread. A handful of raisins (or one of the little packets you can buy) make a nice dessert, or could even be added to the sandwich.

      Take 2, green leaf lettuce leaves add light mayo right on one side of each leaf add lunch meat (or deli meat), cheese and strips of green bell peppers and what else you may want to add but not too much, then roll it up and put a tooth pick in it to hold it together in the container you carry with you. This is suprisingly filling, I took three of them the first time I tried it and I couldn't eat the third one, saved it for the next day! You can prepare this the night before.

      You can eat cold cuts without heating them up...that's on old wives tale. I know MANY people who ate them while pregnant and their babies were perfectly fine...I've been eating them myself as well. Dr. says it's fine.

    I am a fourteen year old trying to eat lunch everyday, during summer. I wake up around noon or eleven and sometimes just eat just breakfast. I want to eat lunch, but cannot eat out and I don't like many cold cuts and processed food.       If you are on a semi-diet, try vegetables and fruits. They are healthy and eating tomatoes and cucumbers will make your acnee simply disappear. Try mixed salads of fruits and vegetables. When you are in mood of proteines, try easy meat like chicken or fish.

    We eat generally healthy, just lunch seems to be whatever we can get our hands on at the time. I would really like to find something that I could make ahead and freeze or something that will also get more veggies into my son's diet. Any ideas?
    My son is 2 BTW and the only he can't eat is peanuts. They give him bad stomachaches.

      I cut up a bunch of veggies and put them in a ziploc bags in 'snack' sizes. I usually make 5 or 6 of these bags and just leave them in the fridge. You don't have to bother with chopping a bunch of things whenever you want veggies. You just grab a bag and go. Kids like finger foods, and love dip.

      You can make zucchini bread much like you would banana bread. It's very yummy.

      You can make dishes like ratatouille, veggie lasagna (I add lots of spinach), spaghetti (I blend up veggies like mushrooms, peppers, zucchini, etc. and mix it with the sauce so Alex doesn't know he just ate a yucky mushroom. He just likes the sauce. Sneaky ;) ), etc. and freeze them into lunch sized portions. Next time you make a dish like this, make a double batch.

      If he'll eat hummus, that's easy to do. Dip veggies or crisps.

      You can also make homemade pizzas and pile on the veggies. It's something you two can make together. I do this on pita shells. Spread pizza sauce on top of the shell, and let your kids put their own toppings on. Bake for 15ish minutes until the cheese melts.

      1 pouch of Tuna or Chicken (Family Size)
      1 can of garbonzo beans (or lentils) drained
      Spinach
      Bean Sprouts
      Green Peppers / any other veggies you like
      Low Fat Cheese
      Mustard
      Whole Wheat Tortillas
      1. Drain the tuna and garbonzo beans real well, then mix together in a bowl with some seasoning (Mrs. Dash, garlic powder, chili powder, whatever you like)
      2. Spread a thin layer of mustard on the tortilla. The first time I made these ahead of time, I didn't do this and the tortillas got soggy. I've been meaning to try avocodo instead of mustard, but keep forgetting to get some when I'm at the store.
      3. Place spinach leaves, tuna mixture, cheese, sprouts and other veggies on the tortilla.
      4. Wrap up tortilla like a burrito.
      5. Loosely wrap in aluminum foil.

      When I go to eat them I roll the foil down a little at a time to cut down on the mess.

      You can make any variation of raps for your lunch at work. Add just the incredients, cold cuts and cheeses you like.

      OR Oriental Chicken Salad:

      1egg
      1/2 cup milk
      1/2 cup flour
      1/2 cup corn flake crumbs
      1 teaspoons salt
      1/4 teaspoons pepper
      1 boneless -- skinless chicken breast half
      oil for frying
      3 cup chopped romaine lettuce
      1 cup red cabbage
      1 cup Napa cabbage
      1/2 carrot -- julienned or shredded
      1green onion -- chopped
      1 tablespoons sliced almonds
      1/3 cup chow mein noodles
      Dressing
      3 tablespoons honey
      1 1/2 tablespoons rice wine vinegar
      1/4 cup mayonnaise
      1 teaspoons Grey Poupon Dijon mustard
      1/8 teaspoons sesame oil

      Prepare dressing ingredients by mixing in a small bowl. Refrigerate while
      preparing salad. Cut each chicken breast into 5 strips. In one bowl, beat
      egg with milk. In another bowl, combine flour with corn flake crumbs,
      salt and pepper. Preheat oil over medium heat. Dip individual chicken
      pieces in egg mixture and then roll in the flour mixture. Fry chicken
      until browned, drain and set aside. Prepare salad by tossing the chopped
      romaine with the chopped red cabbage, Napa cabbage, and carrots. Sprinkle
      sliced green onion on top of the lettuce. Sprinkle almonds over the
      salad, then the chow mein noodles. Cut the chicken into small chunks.
      Place the chicken onto the salad forming a pile in the middle. Serve with
      salad dressing on the side.

      You can make so many different salads with pasta or rice. Add chicken or shrimp and any kind of veggies.

      And for your thermos any soup...veggie soup, chicken soup, a cream of brocoli soup or simmilar soups. Here is one I like, a very healthy and delicious soup

      Red Lentil Soup

      5 cups water
      1 cup dried red lentils
      2 cups chopped onions
      2 cups chopped potatoes
      8 cloves garlic, peeled and left whole
      1 tablespoon canola oil
      2 teaspoons ground cumin
      1/2 teaspoon turmeric
      1 teaspoon salt
      1/3 cup chopped fresh cilantro
      3 tablespoons fresh lemon juice
      salt and pepper
      Add the first 5 ingredients to a large pot; cover and bring to a boil.
      Lower the heat and simmer 15-20 minutes or until the lentils and veggies are tender.
      Take pot from stove burner and set aside.
      In a small saucepan, add the oil; warm over low heat until the oil is hot but not smoking.
      Add in the cumin, turmeric, and salt; cook and stir constantly for for 2-3 minutes or until the cumin has released its fragrance (be careful not to scorch the spices).
      Set spice mixture aside for 1 minute to cool.
      Stir spice mixture into the lentil mixture; add cilantro, stir to combine.
      You can puree the soup, in batches, in a blender OR you can use an immersion blender and blend to desired texture (I like to leave it a little chunky).
      Add in lemon juice; stir to combine.

      Have some of those, and maybe half a sandwich on whole wheat.

      Soup is a good option. As are turkey and veggie wraps, hummus and veggies, yogurt...
      If you are ordering out for Chinese, most places will have steamed options or will do it for you if you ask. Try steamed chicken and veggies with a little brown rice and brown sauce on the side.

      If you are ordering sandwiches, get lean meats and try to avoid creamy condiments. Skip the cheese or ask for only a little.

      If you are getting pizza, have only a slice or two and load up the top with veggies to make it more filling and have it with a side salad or a broth based cup of soup.

      If you have no heating facilities, a couple of slices of this cold will be yummy.
      Quiche:- Crab
      (by Dune 8/9/08)
      1 Pastry shell. (9 inch partially baked)
      1T. Butter.
      2T. Shallots. (minced)
      1C. Crab-meat.
      1T. Flour.
      1½C. Swiss cheese (shredded/divided)
      3 Eggs.
      1C. Half and half.
      ½t Salt.
      Dash white pepper.
      Dash nutmeg.
      Parsley. (chopped)
      Have a 9-inch pastry shell partially baked.
      Sauté shallots in butter until tender, about 2 minutes, mix with crab-meat and flour and set aside.
      Sprinkle ¾ cup the cheese in the pie shell, then spread with crab mixture. Sprinkle with remaining ¾ cup of cheese.
      Beat eggs, cream, salt, pepper, nutmeg, and parsley until mixed.
      Pour into shell.
      Bake for 25 to 30 minutes at 350 degrees.
      Serves 6 to 8.

      4 small chicken breasts, sliced into strips
      1 tablespoon Cajun spice
      2 teaspoons olive oil
      4 large flour tortillas
      1/2 cup tzatikki dip
      1 medium zuccini, grated
      1 large carrot, grated

      Method:
      1. Place chicken strips, Cajun spice and oil in a bowl, cover and set aside for 10 minutes.

      2. Heat a large non-stick fry pan over a medium-high heat.

      3. Place the chicken strips in the pan and cook, stirring occasionally for 5 minutes or until brown and cooked through. Transfer to a bowl and keep warm.

      4. Top each tortilla with Tzatziki dip, carrot, zuccini and grated carrot.

      5. Serve immediately, or wrap for later use with a green salad of your choice.

      Or a sandwich with a salad can be an easier alternative.
      Salads are really good also.

      Special K Bar & yogurt aren't really healthy. If you have to, eat only one & the yogurt is better.

      Add things like:

      1 cup of baby carrots: 70 Cal.
      1/2 breast of baked chicken: 142 Cal.
      1 cup of cherry tomatoes: 31 Cal.
      1 oz of Cashew Nuts: 156 Cal.

      Remember to drink lots of water & take a multi-vitamin.

      Something I've been doing lately is trying to pack a food for every color of the rainbow to ensure my maximum nutritional intake :) For example, I packed a sandwich along with strawberries, carrots, a cheese stick, green grapes, blueberries, and purple grapes. If you don't like some of these food, good substitutes are apples (red, green, or yellow), oranges, or other fruits. Hope this helps!

    At my school cafeteria, they give you an option to have a bagel, 3 mozerella sticks, an apple and milk. Is this an OK lunch to eat everyday? Is is healthy enough?

      -This lunch does have fiber, in the apple. Fiber keeps you fuller longer. The milk is good, hopefully it is low-fat or skim. The mozzarella sticks are loaded with calories and saturated fat....very bad. The bagel is most likely not whole grain and is then of no nutritional value. White flour bagels are terrible because they are loaded with calories and no nutrients then people load them up with saturated fat toppings. White flour bagels also cause your blood glucose to surge and then crash leaving you craving snacks and feeling hungry (to be more technical bagels have a high glycemic index). Are there any vegetables or lean meats (chicken, turkey, ham) available? Those choices would be better than the cheese sticks and bagel.

      I usually eat my lunch in this viriaty: I take in ANY veggies. sliced bell pepers, babay carrots, cauliflower, broccoli, celery sticks etc. etc. in a plastic baggy
      I also bring 1 fruit ALWAYS as sweet treat. an apple, pear, nectarine...anything I can fit in my lunch box.
      I just went and bought some granola bars. For school of course! But make sure to buy to either organic or ones that use as natural ingredients as possible. Kashi is a good brand. I also buy Antie Ann's organic granola bars.
      popcorn is light and good. But make sure to NOT bu carmle, butter, chedder ones...too many extra fatty calories. I just bought a pack or trader joes kettle corn. Its nly 110 calories a packet. really good!
      nuts are a good source of protein1 I love them. With raisins or dried cranberries (called craisins) are good, too. But theyt are full of additional calores. So watch out for nuts. Just saying because its full or protein and wont make you fat. At all.
      juices. I like naked juices or bolthouse. Wath out the calories on those too. But they are filled with vitamins!
      make sure to eat only whole grain bread. aka brown breads. Dont go for "whole" or "whole wheat" it isnt good enough. It could be just as bad as white with all the corn syrups and what not. Whole grain is best. Same with dough or rice. oats are good as well. But more for breafast.
      I would say granola-but those can be high on calories and added with a tons of sugars. Make sure to buy natural graola and watch your servings.
      I like tofu! that is all.
      yogurt is amazing! But watch it. DO NOT fall for those "low fat low calroei" scams. caompanies such as yopliat claim to have "wholesome" products, but in reality-its filled with artificial colors, preservaties and corn syrups which btw, can make it harder for fat to go away. What would you go for the long run? "low calroie" fat sticking pink yogurts or the real, healthy yogurts that our ancestors ate? It you want to go with the GOOD choice, I advise buy all natural or organic yogurt. the less ingredients it has, the better it is. I buy Nancy's or brown cow yogurt. Heres a hint: is the second or third or first ingrent has High fructose corn syrup or sugar-its poision basically. I sometimes buy Tillamook yogurts, which arnet the best, but there not as bad as the worst! hence dannon, yoplait. However, dannon isnt THAT bad eitehr but isnt the best. Go for organic yogurts. The good party is, they are VERY good and tasty and high in protein, which keep syou fuller longer! 170 calories a serving size wont kill you. Instead of 100.
      berries are great! I know they are a fruit (which I already stated) but they are so yummy! LOW calorei and I mean LOW LOW and you will get filled up before taking in that many calories. for instance, each raspberry is 1 calorie.       I try to eat healthy and for lunch I usually have turkey on wheat bread with dijon mustard and lettuce....the mustard is healthier than mayo/miracle whip! Also, this is my favorite, I always eat a banana with peanut butter, it's SO good and filling, not to mention healthy (with protein and potassium!)       Generally what I do is just make a little more food for dinner and bring the leftovers for lunch the next day, and I really don't cook a lot. Another thing my husband and I do is cook grilled chicken and pork chops that will last a few days and eat for lunch and dinner If you don't really want to cook here are some quick suggestions I use when I just need to throw something together without spending much if any time by the stove:

      -carrots and sliced cucumbers and hummus
      -fruit
      -string cheese
      -yogurt
      -prepackaged turkey meatballs pre cooked (take about 30 seconds to heat up in microwave) can eat over uncle bens ready rice or with a little sauce and melted cheese
      -egg salad- super easy to make just boil some eggs and mix in low fat mayo and some salt n pepper

      I also made this (my second favorite)

      Can I make a couple of corrections? Bread is a carb, a carb can not turn into a fat very easily. You will probably burn up the bread today so I wouldn't worry about it. The string is: Bread/carb/sugar/mixes with insulin in blood stream goes to liver if possible, if not, THEN it gets stored as fat.
      Mayo is fattening.
      Mustard is not. To make mustard fattening, you'd probably have to eat the whole jar.
      Cheese, well, yes, cheese is fattening, but you can't avoid ALL fat. Try a low fat cheese. The benefits out weigh the fat if you use only one slice.
      I'd go with the turkey or a chicken breast cut into slices.
      Don't forget the veggies, tomatoes, lettuce, etc

      A healthily made sandwich made with a multi-wholegrain bread can be quite nutritious and healthy, just steer clear of the chips.
      Also try toasting the bread and using a thick, chunky style salsa instead of mustard for a change of pace.

      1 can chickpeas, drained (also known as garbanzo beans)
      2 tsp garlic (minced)
      2 tsp lemon juice
      2 tbsp olive oil

      Mix all ingredients in a blender and add more olive oil to get the consistency you want.

      It's filling and tasty. Hummus is also best when served at room temperature.

      Also:

      Chef salads (with boiled egg as a must; filling and gives you protein)

      Sandwiches (lean meats, cheese, romaine lettuce and tomato; go for whole wheat bread and mind what kind of bread you buy, some brands have a lot of high fructose corn syrup)

      Tuna is definitely one of the better things you can eat, just make sure it is suspended in water, not oil. Also, fresh fruits and veggies, of course, and any kind of 100% whole grains, because these will keep you feeling fuller longer.       2 tablespoons vegetable oil
      1/2 cup chopped onion
      1 lb chicken breast, cut in strips (marinate in soy sauce and garlic for great flavor)

      1 red bell pepper, sliced
      1 yellow bell pepper, sliced
      1 cup celery, sliced (2 stalks) (optional)
      1 (15 ounce) can baby corn
      salt (to taste)
      soy sauce (optional)

      Sauce
      1 tablespoon oyster sauce
      1/2 cup water
      1 teaspoon cornstarch (just use enough to thicken slightly)
      Directions
      1Saute onions in oil.
      2Add chicken and stir fry until browned. If not marinated, season with soy sauce and garlic.
      3Add vegetables except for baby corn and salt. Stir fry for 3-4 minutes.
      4Add baby corn and soy sauce to taste, if desired.
      5Pour sauce over, stir till all vegetables are coated. If more sauce is needed, just double the recipe. I haven't made this in ages, so you might need more. I can't remember.
      6Sauce: stir all ingredients for sauce together until slightly thickened.

      Let your mom to cook that for you and just reheat that in your microwave in school, bring boiled rice also. And don't forget a fresh fruits for your dessert, banana or apple

      Yes it will make you fat! well... not really, but I don't consider that a healthy meal. I never heard of soy-nut butter, but what I do know about soy is that it has ingredients in there with estrogen-like properties. Do you know what estrogen is? Among other things, it is a fat storing hormone. Oh, and sugar free jelly? lol, what kind of jelly is sugar free! Look at the ingredients I'm sure there are some sugar alcohols in there like maltodextrin. The only reason they can label it sugar free is because sugar alcohols are actually carbohydrates.

      Now the bread... When you say wheat bread, you should be eating WHOLE WHEAT bread. You have to watch what you buy because just the play in words can lead you to believe its healthy when its not. The bread need to contain The whole grain which is the germ, bran, and endosperm. Your wheat bread may only contain the endosperm which is the starchy part of the grain.

      This is what your lunch should look like:

      Organic peanut butter and organic jelly on sprouted bread.
      1 medium sized organic apple (no pesticides, herbicides, or insecticides that can mimic estrogen)

      Don't worry about the small amount of sugar in the jelly. The slow digestion of complex carbs and fiber will counter any kind of spike in blood sugar.
